Ravioli trio!

I'm sorry folks for being away so long! I realize it's been a month since I last blogged. Bad blogger! Thanks to my one follower Adriel for hanging in there. :)
So my latest culinary obsession has been fresh pasta. I just can't get enough. I threw a little dinner party last month for some friends celebrating my settling in San Francisco. It was awesome. I made cannelloni with a ricotta and spinach filling, topped with a very herby marinara sauce. I used basil, thyme, marjoram, and a bit of rosemary. The dessert was made by pastry chef friend Adam. It was a nectarine gallete. Everything was delicious and the company was fabulous! BUT! In all the excitement of dinner, i forgot to take photos. Que lastima!
So on to the good stuff, the subject of my post! I spent a large part of today ravioliing.... I just invented that word. I made three fillings, pork with onion and red bell pepper, basil and walnut pesto, and ricotta with pecorino and spinach. I made a really big batch so i could freeze most of it for later use.
Here is a sampling of the finished ravioli. The squares are the ricotta, the triangles are the pesto filled, and the half-moons are pork. I froze them on a floured baking tray to keep them seperated, and bagged them. Voila! Quick and easy dinner for the comming weeks.
